Some Like it HOT – Stuffed Zucchini

4 Round Zucchini
2 Cooked Chicken Breast
1 Bunch Asparagus
1 Habanero Pepper
1/4 Cup Red Onion
2 Cloves Fresh Garlic
1 1/2 tsp Sea Salt
Cracked Pepper to taste
2 tbsp Extra-Virgin Olive Oil
Wash all vegetables. Hollow out each zucchini, working from both ends with a small melon-ball cutter or an apple corer, removing all seeds and leaving shells about 1/3 inch thick. Discard the guts, pulp and seeds. Place hallowed-out zucchini in the oven for 20 min at 350°F.
Next, heat olive oil in a deep 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion, stirring, until golden, 6 to 8 minutes. Add garlic and stir for 1 minute. Then, add diced jalapeño, asparagus and habanero. Continue to stir and cook for 6-8 minutes.
Transfer 1/4 cup onion mixture to a bowl and cool slightly. Add cooked chicken meat, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and mix well with your hands. Then, remove zucchini and stuff shells with meat and vegetable mixture.
Lastly, add the stuffed shells into the oven for 5-7 minutes. Take shells out of the oven. Let cool about 5 minutes, then squeeze lemon over dish before serving.
